Another week, another box of Homemade from Ayesha Curry! In this week's Classic Box, there were ingredients and recipe cards for Mango Chimichurri Steak with Spice Rubbed Roasted Parsnips and Carrots and Smoky Rubbed Salmon with Creamy Kale and Purple Hasselback Potatoes.
Ayesha debuted Homemade TV on Wednesday, which is a live stream of her (and her family as cameo!) cooking one of the meals from the box so you can follow along with her. It is pretty neat that we can essentially virtually hang and cook with the Curry family for an hour, but what's even neater is that Ayesha answers viewer Q&As and drops hints on what she's working on — whether she is supposed to or not! During the stream, she unveiled two products from her cookware line coming up, a cutting board and a bowl. She also revealed that news will be announced next week regarding International Smoke*, the pop-up concept she did at Michael Mina's Test Kitchen last year. EEK!
*Click here to see my review of the pop-up from last summer. And after just a day of Ayesha hinting the news, it has been reported that International Smoke will open at Millennial Tower in San Francisco, replacing Michael Mina's RN74 restaurant.
Mango Chimichurri Steak with Spice Rubbed Roasted Parsnips and Carrots

As I mentioned last week, I just love how these meals are perfectly portioned, and this one isn't any different. I'm a sucker for chimichurri steak, so I was beyond excited when I saw this was on the menu. I've never had mango chimichurri before, and I loved it — the flavors just blended perfectly together, with the mangos giving it a tart, sweet kick. I have to admit though, I somehow absolutely butchered cutting the mango that was provided in the box that I had to go out to the store to get more mangos. Of course, no mango went to waste either way!

I've made so many of Ayehsa's recipes now, and let me tell you, that is nothing but the truth. Every. Single. Dish. Is. SO. Flavorful. That beautifully marbled skirt steak, sourced from Allen Brothers, was pretty flavorful on its own even though it was just seasoned with salt and pepper, but that mango chimichurri did magical wonders to it. And those vegetables — I love how she makes everything taste so good that even if you're a picky eater, you'll still enjoy it.
Smoky Rubbed Salmon with Creamy Kale and Purple Hasselback Potatoes
Mmm, mmm, mmm, mmm, MMMM! Where do I even begin? I suppose the main attraction, the Smoky Rubbed Salmon.That spice rub kicks your taste buds in the best way, with a delicious combination of smoked paprika and brown sugar.
The prep time felt like it took longer than 10 minutes, mainly because I really wanted to be cautious when cutting the baby purple potatoes so that they become Purple Hasselback Potatoes. It was my first time cutting them this way, and I think it was a success! I also wanted to make sure the herb mixture was mixed well in between the cut sections, which took extra time as well. These are by far the fanciest potatoes I've ever made and they turned out great.
Lastly, that Creamy Kale. It has onions and kale, sautéed in bacon fat + bacon bits! One whole small onion was probably a little too much, but the plates were basically licked clean anyway. Though I'm not a big kale fan, I'll take this side dish any day.
